Full English Breakfast

 

Great news!!! It is possible to enjoy a full English Breakfast - healthily.

 

Ingredients

 

Serves 2

 

1 Pack of Turkey rashers
4 low-fat Chicken sausages
4 free range eggs
4 tablespoons of skimmed milk
6 large chestnut mushrooms, cut in half
3 medium tomatoes, cut in half

 

Method

 

 

Heat the oven at 180C degrees
Place a wire rack and position it on top of a baking tray. Lay the sausages on the wire rack and pop into the oven.
After 5 minutes or so, line a roasting tin with greaseproof paper and add the mushrooms and tomatoes. Spray with low fat vegetable oil spray, season with salt and pepper and place in the oven shelf under the sausages.
Take the wire rack out of the oven, add the turkey rashers and pop it back to cook for a further 15 minutes
Once the meats, mushrooms and tomatoes are cooking nicely in the oven, prepare your scrambled eggs.

In a bowl, whisk the eggs and milk together, add a pinch of salt and cook on low heat in a non stick pan which as been previously greased with a few drops of olive oil. Using a spatula, keep folding the edges into the middle of the pan until the egg mixture is cooked to your liking.
Serve your healthy English breakfast on to a hot plate and garnish with plenty of black pepper and enjoy!
