Poached Eggs & Smoked Salmon

 

This healthy breakfast provides an excellent source of Omega-3 fatty acids - essential for brain function, reducing CHD risk and healthy hair & nails. This breakfast also provides you with a high quality protein start to the day.

 

Ingredients 

 

450g Smoked Salmon

4 eggs

2 tablespoons chopped chives

freshly ground black pepper

150ml white vinegar

200g Rocket leaves

 

Serves 4

 

Fill a seaucepan 1/2 full with cold water and bring to the boil.

Add white vinegar at a ratio 4:1 (water to vinegar), this helps the whites to firm quickly.

Place Smoked salmon on to 4 plates or as required.

When water is fast boiling crack eggs 1/2 at a time, opposite sides of the pan.

Cook for 3-4 minutes.

Remove cooked eggs from water with a draining spoon - keep warm in tepid water while you cook the other 2 eggs.

Place eggs onto Smoked salmon and Rocket leaves.

Grind fresh Black Pepper & garnish with chopped chives.
