Sun-dried Tomato Omlette
Serves 4
Ingredients
12 Fresh Free Range Eggs
1 Tbsp Olive Oil
1 Large Red Onion
2 Tbsp Chopped sun-dried tomatoes
12 Cherry Tomatoes - halved
handful of Basil leaves
75g watercress
Ground Black Pepper
Method.
its best to make one Omlette at a time so crack 3 beats inot a bowl and whisk gently with a fork and season with the pepper.
Turn the grill on high.
Drizzle some Olive Oil into a frying and heat gently, add the Onion and cook until soft or has slightly caramilsed. Transfer to a side plate and set aside for later.
Add the eggs to the frying pan, swirl around to cover the base of the pan.
scatter some of the cooked onion, sun-dried tomato, cherry tomatoes and basil over the top of the omlette and slide the pan under the grill for 1-2 minute or until golden.
Transfer omlette to a plate and keep warm whilst you cook the remaining omlettes, serving with the watercress, basil and extra pepper.
