A Simple White Sauce

A simple low fat white sauce to garnish steamed vegetables, fish or chicken dish.

Ingredients.

125ml (4fl oz) skimmed milk

2 egg yolks, beaten (free range)

200g low fat yoghurt (<1% fat)

Salt & Pepper

Chives & Gerkins (for Fish)

Method.

In a medium sized saucepan heat the skimmed milk until lukewarm and season.

Pour a small amount over the beaten egg yolks and mix.

Pour the egg mixture into the remaining milk, stirring continuously.

Stir in the yoghurt and beat well.

Heat the sauce through.

Add the chives and gerkins at this point if using sauce for fish.
